



HYSTORY
The Filippo Morese Farm is located at Pontecagnano in the Piana del Sele, Province of Salerno, an area that, for centuries, has bred buffaloes and produced buffalo mozzarella, which comes from the special manufacturing of its milk. Extending over approximately 80 hectares, the farm has belonged to the Morese family for centuries. In 1694 Geronimo Morese bought the Auteta Estate, and in 1754 his son Gaspare bred a herd of 166 buffaloes there. After nine generations and another three centuries, Filippo Morese continues the family tradition on the very same land. He breeds a herd of 600 buffaloes in modern stables, with wide covered spaces and several hectares of grassland for grazing.


At the ancient coaching station of Taverna Penta, we welcome our guests, who can purchase the Mozzarella di Bufala Campana DOP and a variety of dairy products made exclusively from the milk of our own buffaloes at the dairy shop. They can also relax in the yogurt bar for a rich breakfast, a coffee, a light lunch, a delicious snack, or a tasty aperitif. Guests can begin a guided tour or participate in an event or corporate meeting.

THE DAIRY
FILIPPO MORESE AND HIS PRODUCTION
The manufacturing process at the Taverna Penta Dairy, following the ancient recipe of buffalo milk, rennet and salt, is still based on artisanal actions and rhythm, which, when combined with modern production technologies and tests applied during all manufacturing phases, are an absolute guarantee of hygiene and reliability of the products. The dairy makes mozzarella, in its various shapes and sizes (ciliegine, bocconcini, bocconi, 250g and 500g mozzarellas and plaits) and ricotta. When the quantity of milk produced on the farm allows, the dairy also makes smoked buffalo mozzarella (provola), primosale, scamorza and caciocavallo cheese. The Taverna Penta Dairy is a member of the Union for the Tutelage of Campana Buffalo Mozzarella, which in 1996 acquired the DOP certification: Protected Designation of Origin.

The Filippo Morese Taverna Penta Yoghurt Bar uses milk exclusively from buffaloes bred on the farm to produce natural, fruit and barley malt yoghurt. Besides the yoghurt we produce puddings and ice creams in the classical flavours, a variety of fruit flavours as well as fior di bufala, ricotta and buffalo yoghurt. Using the dairy products and other high quality raw materials, every day our confectioner makes sweet and savoury cakes, which our customers can enjoy inside the ancient farmhouse or in the courtyard.

At lunch time, but also during the whole day we offer to our client our tasting plates: “classico” with bocconcini of Campana Buffalo Mozzarella DOP, scamorza cheese and buffalo ricotta, buffalo salami, tomato salad, “bufala e insalata” with ciliegine of Campana Buffalo Mozzarella DOP, primosale, mixed salad, tomatoes and walnuts; “mozzarella e prosciutto” and “ solo bufala” possibly served with a wine glass or a prosecco flute.

TOURS
a unique experience
The guided tour at the Filippo Morese farm includes a visit to the Taverna Penta Dairy, where the company is introduced, along with its activities and history. The original parchment from 1694, which contains the deed of purchase of the property, is shown, along with a video on the production of Mozzarella di Bufala Campana DOP. The tour then continues with a small tasting of our dairy products in the Taverna Penta courtyard. The tour concludes with a visit to the nearby farm to see the buffalo breeding. Adjacent to the historic Taverna Penta building stands thes stallone, the old ox stable once used for working the land and transporting the farm’s products. This space has undergone a significant restoration, transforming it into a hall capable of hosting over 100 guests for a variety of events, including conferences, business meetings and workshops, cultural gatherings, and private parties. A highlight of the venue is the family’s break, an antique carriage built by the Neapolitan coachbuilder Fratelli Solano in the second half of the 19th century. The hall also features several photographs from the early 1900s, showing the carriage in Naples, drawn by a pair of Salerno horses and carrying Raffaele Morese—great-grandfather of the current owner—along with his two sons, Filippo and Giuseppe.

Filippo Morese Farm offers accommodation in apartments located in the Auteta farmhouse, which is 1.5 km far from Taverna Penta. Thanks to its favourable location in Pontecagnano Faiano, Campania region, the Auteta farmhouse is the ideal starting point for visiting the historical and natural beauties of the region. Located few minutes far from SA-RC highway, Salerno Amalfi Coast airport and Pontecagnano railway station, Auteta farmhouse enables you to reach easily all main beauties of the region: Paestum and Cilento coast, Salerno with Vietri and Amalfi coast, Capri, Pompei and Naples. Our offer includes three apartments, with four to six beds each. All apartments are equipped with kitchen, air conditioner, heating, TV, wire-less internet access, linen and bath towels. It is only foreseen the final cleaning of the apartments.
The farm also boasts a dairy and yoghurt bar, which is situated in the ancient courtyard at Taverna Penta and recognized by the Ministry of Cultural Heritage as ‘testimony in architecture of remarkable historic and environmental importance; one of few such buildings, once plentiful around Pontecagnano, still preserved intact today.’ As can be seen on the XVIII century maps displayed in the yoghurt bar, Taverna Penta, sitting roughly 10 miles from both Salerno and Eboli, was originally a stop for the carriages travelling along the ancient consular road to Calabria. In the XIX century it was adapted for agricultural use and acquired a more rural aspect when the second floor was added to the existing building.
